Beet juice is very powerful so a little goes a long way. Start off with a small amount until your body adjusts. You may notice that drinking beet juice turns your urine and bowel movements a pinky-red. This condition is harmless.

Juice Storage Tips
Fresh juice, such as beetroot juice are not meant to be stored for long periods of time. It is best to prepare the juice daily and consume it within 24 hours for best results. Over time, and because of oxidation, the potency of the juice diminished. If you must store the juice longer than 24 hours, be sure that you put it in the fridge and add some lemon to it to help it stay fresh. Always use an airtight glass container for storage.

Growing Your Own
Beets are not particularly hard to grow and there are a wide variety to choose from. Each variety has a unique set of properties and some are even grown specifically for their  greens such as ‘Bull’s Blood.’ Others are grown because they can be stored for a long time.

Beets are in the same family as spinach and chard. In addition to the usual red variety there are numerous others to consider including:

Boldor: This variety has orange stems, yellow flesh and bright green leaves.
Bull’s Blood Scarletta: The flesh of this beet is vibrant pink and the stems, leaves and outer skin are all dark purple.
Subeto: This beet type has deep purple -red roots, green leaves and purple stems.
Chioggia: The inside of this beet variety is red and white and it has reddish-pink skin, pink stems and green leaves.
Albina Verenduna: This variety has pure white roots and pale green stems.
Beets grow best in full sun and can be planted about one month before your last expected frost date. Sow the seeds directly in the garden half an inch deep and 2 inches apart and follow up with a second planting two to three weeks later. Rows should be 12 inches apart

Beet seeds prefer cool soil. For fall harvest, plant 10 to 12 weeks before expected first fall frost. It is best to know what growing zone you live in so that you can plant at the right time.  Beets like at least a 1-inch layer of compost, organic fertilizer and soil that has a pH between 6.2 and 7.0. Be sure to think them out so as to allow some room in between each beet.
